Pumpkin Muffins
Ingredients
4 eggs
2 cups white sugar
1 1/2 cup of oil
3 cups flour
1 tsp. cinnamon
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
14 oz. pumpkin (fresh or canned may be used)
2 cups raisins
Directions
Mix eggs, white sugar and oil together, set aside. Mix dry ingredients together and then into previous mixture. Add pumpkin and raisins. Do not overmix. Fill muffin papers 2/3 full and bake at 400 degrees for 15 minutes.
Note: Fresh pumpkin can be cooked in the microwave by simply cutting the pumpkin horizontally in half, seeding it, and placing cut side down on a plate. Cook on high until the pulp is soft and easily scooped out of the shell (10-15 minutes, dependant on size of pumpkin). Puree in blender to achieve consistency necessary for baking.
